Baked Pumpkin Oatmeal


This healthy baked pumpkin oatmeal is a great way to start off a chilly Fall morning will make your house smell amazing. It’s perfectly balanced with superfood ingredients to keep you going strong until lunch as well.

Prep Time: 10 minutes    Serves: 6




2 cups old fashioned oats
1/2 cup pure pumpkin puree (do not use pumpkin pie filling)
1 cup chopped Granny Smith apples (core and skin removed)
1 tbsp chia seeds
1 1/2 cups almond milk
1 large egg
3 tbsp melted butter
1/4 cup brown sugar
2 tbsp maple syrup
1 tsp vanilla extract
1 1/2 teaspoons pumpkin pie spice
1/2 tsp sea salt
1 tsp baking powder
1/4 cup chopped pecans


Preheat the oven to 350 degrees F. Lightly coat a 9 x 13 square baking dish with coconut oil spray and set aside.
In a medium bowl, mix together the oats chia seeds, brown sugar, baking powder, sea salt, and pumpkin pie spice.
In a smaller mixing bowl, whisk together the almond milk, pumpkin puree, maple syrup, egg, butter, and vanilla extract.
Pour the milk mixture evenly over the oats and stir until well coated. Add in the chopped apples and chopped pecans and mix evenly. Pour oat mixture into prepared baking dish and bake for 30-35 minutes until a fork poked in the middle comes out clean. Let cool for several minutes, then serve in bowls.
